I'm in such a fab mood today, a lot of people know that I'm very much into the colder seasons and don't tend to enjoy the heat too much.
Lord knows what's happened THIS year. I'm feeling it lol x
So, I mentioned in my last post about baking Birthday Cupcakes for my Mum..
Here they are..
If you want to make them too, here's how you do it..
You will need..
5oz Self Raising flour
Butter cream frosting
175g Icing Sugar
Food colouring/decorations of your choice
Depending on how big/small the Muffin cases are this should make about 5-8 cupcakes. If you want to make more or less, just change the measurements a little. As long as you use the same amount of Flour, Sugar & Butter its all good ;)
What to do..
Cream the butter and sugar together in a bowl (do this for about 3-5 mins) and then add the vanilla essence.
Add the eggs, one at a time, adding a spoonful of flour (Prevents mixture from curdling.. check me out :P)
Fold in the rest of the flour & add milk, I use quite a bit of milk, the batter is a whole lot smoother.
Scoop the batter into the muffin cases and put them into a Pre-heated oven for 15 mins on Gas Mark 4. They may need an additional 5 mins depending on how big they are.
|I gave these an extra 5mins to golden as they were cooked but looked a little too light on the top.|
It's as easy as melting the butter and mixing the butter, icing, more vanilla essence and food colouring together. Beat it until it all comes together.

You can buy brilliant colourings from your local Bakery. I also ordered the edible beads, black muffin cases & the glitter from cakes cookies and crafts shop.
Once decorated, you'll end up with fabulous colourful, pretty cupcakes..
